CINCINNATI CHILI & SPAGHETTI. 3, 4, OR 5 WAY

Cincinnati chili (or Cincinnati-style chili) is a Mediterranean-spiced meat sauce used as a topping for spaghetti (a "two-way") or hot dogs. Ingredients include ground beef, spices such as cinnamon, nutmeg, allspice, cloves, cumin, chili powder, bay leaf, and in some recipes unsweetened dark chocolate in a soupy consistency. Other toppings include cheese, onions, and beans; specific combinations of toppings are known as "ways."

CINCINNATI STYLE CHILI This recipe is enjoyed by Cincinnati area residents at Restaurants like Skyline, Gold Star and often made at home. The secret to this delicious chili is Cinnamon and Cocoa used in the recipe. Serve it over spaghetti or hot dogs. A three way is spaghetti, chili and topped with Cheddar. Make it a four way with adding kidney beans or onions, or make it a 5 way by adding both. A common favorite is to add some Tobasco for kick

INGREDIENTS


FOR THE CHILI

  • 2 lbs lean ground beef

  • 1 onion, chopped fine

  • 1 celery rib, chopped fine

  • 1⁄2 red bell pepper, chopped fine

  • 6 cloves garlic, minced

  • 2 tablespoons chili powder

  • 2 tablespoons cider vinegar

  • 1 1⁄2 tablespoons Worcestershire sauce

  • 1 tablespoon granulated sugar

  • 1 tablespoon mild paprika

  • 2 teaspoons cocoa

  • 1 1⁄2 teaspoons cinnamon

  • 1 1⁄2 teaspoons ground cumin

  • 1 teaspoon ground allspice

  • 1 teaspoon kosher salt

  • 1⁄2 teaspoon black pepper

  • 1⁄2 teaspoon ground cloves

  • 1⁄2 teaspoon cayenne pepper

  • 1 (15 ounce) can tomato sauce

  • 1 (10 ounce) can tomato puree

  • 1 1⁄2 cups water

FOR THE REST

  • 16 ounces thin spaghetti or 16 ounces spaghetti, cooked al dente

  • 1 (16 ounce) can dark red kidney beans, rinsed and drained

  • 1 large sweet onion, finely chopped

  • 8 ounces sharp cheddar cheese, finely shredded

  • oyster crackers (optional)

  • hot sauce (restaurants use Tobasco Sauce)


Instructions:

  1. In a large frying pan over medium-high heat, saute onion, ground beef, garlic, and chili powder until ground beef is slightly cooked.

  2. Add allspice, cinnamon, cumin, cayenne pepper, salt, unsweetened cocoa or chocolate, tomato sauce, Worcestershire sauce, cider vinegar, and water. Reduce heat to low and simmer, uncovered, 1 hour 30 minutes. Remove from heat.

  3. Cook spaghetti according to package directions and transfer onto individual serving plates (small oval plates are traditional).

  4. Ladle Cincinnati Chili mixture over the cooked spaghetti and serve with toppings of your choice.

  5. Oyster crackers are served in a separate container on the side.

Serve your chili as follows (items for the 3,4, and 5 way listed in ingredients- others may require items not listed).


3-Way: chili, spaghetti, and cheese.

4-Way: a 3-Way plus onions or beans.

5-Way: spaghetti, chili, onions, beans and cheese.

Hot dog, bun, mustard, chili, and cheese.

A coney minus the hot dog.


Cincinnati burrito:

Chili beans wrapped in a tortilla, topped with chili, onions, tomatoes, lettuce, cheese, sour cream, and black olives.


Cincinnati potato:

Baked jacket potato topped with chili, diced onions, beans and shredded cheddar cheese.


Chili-cheese fries:

French fries topped with chili and shredded cheddar cheese.
